A must-try recipe from Luxembourgish cuisine

This traditional Luxembourgish dish consists of small dumplings made from a simple flour dough. Typically served with a bacon sauce or melted butter, they are a real treat for lovers of hearty home cooking and epitomise the simplicity and richness of Luxembourg’s regional cuisine.

Cooking time: 20 minutes

Ingredients

for 6 people

  • 500 g milk
  • 500 g flour
  • 2 eggs
  • 1 pinch of salt
  • 1 tbsp butter
  • 100 g streaky bacon

Preparation

1Bring a large pot of water to the boil and add a good pinch of salt.
2For the dough, first pour the milk into the mixing bowl of the food processor.
3Then gradually add the eggs and flour while the machine is running on low speed.
4Finally, continue mixing on high speed until a smooth dough is formed.
5Form dumplings with a tablespoon previously dipped in the boiling water and place in the cooking water. Allow the dumplings to cook.
6As soon as they float to the surface, remove them with a sieve and put into a bowl.
7Fry the bacon in a pan with a little butter.
8Add the drained Kniddelen to the bacon in the pan and toss. Serve immediately.

Ben Weber

A paragon of perseverance and passion. Even as a seven-year-old boy, Ben Weber knew that he wanted to be a chef when he grew up. His culinary journey began at the hotel management school in Diekirch. He then went on to open his own restaurant, “Gudde Kascht”, where he conjures up traditional Luxembourg dishes with a modern twist. Ben’s cuisine is characterised by fresh, regional ingredients and an insatiable appetite for reinventing the old and familiar. As President of Luxembourg’s professional chefs’ association Vatel-Club Luxembourg, he is also passionately committed to training and supporting the next generation of chefs and further enhancing Luxembourg’s culinary landscape.
